This Jerusalem style lentil soup makes a great meal when served with pitas, hummus, and olives. Give it a try!


Preparation Time: 10 min. Cooking Time: 1 hour Servings: 6-8

Ingredients:

2 T olive oil

2c onion

3 carrots chopped

3/4 tsp marjoram

3/4 tsp thyme

7 c broth

1 lb lentils

1/2 tsp salt

1/4 tsp pepper

3/4 c grape juice

2 T parsley

Directions:

Saute onion, carrot, marjoram, and thyme in oil just until onion is soft.

Transfer to the large pot and add broth and lentils. Cover and simmer 45 minutes to an hour.

Add remaining ingredients and simmer for additional 10 minutes.

Serve with pitas, hummus, and olives for an authentic meal.
